SNEAKING VEGGIES INTO FOOD

Admit it, eating vegetables isn’t always on your priority list. But you know it is good for you, and your kids. But a plate full of spinach or broccoli doesn’t always look appetizing.

 

Here are a few ways to sneak in vegetables, so that everyone will enjoy.

 

Spinach Smoothies

Mix in spinach into your fruit smoothie. The spinach flavor is usually mild and can be overpowered by fruits. One easy smoothie to make includes: ice, vanilla almond milk, strawberries, bananas and a handful of spinach. If you want more of a juice smoothie, you can substitute the almond milk with juice.

Cauliflower Mac & Cheese

I’ve found that cauliflower has very little taste. I usually take my cauliflower florets and throw them in a food processor so that you get finely grated bits. Once you are mixing in the cheese and milk into your boiled macaroni, you can add the cauliflower. My daughter will have eaten a whole serving of cauliflower and be none the wiser.

Chocolate Cake with Pumpkin puree

Since it is fall, you will see pumpkin everywhere in stores. I always like to pick up a can or two of pumpkin puree. Take any box cake mix. Simply add a 15-ounce can of pumpkin puree and mix. Do not add any other ingredients. Bake according to the directions. Granted it is a dessert, but at least you are getting some nutrition out of it.
